White balsamic is made from the same grapes as its darker/oakier cousin. White balsamic is aged in stainless steel, or white oak and therefore has less of the complex fruity, vanilla, dark chocolate notes of the more known dark aged balsamic. However it gives a light, sweet, clear flavour, with its own layers of fresh grape juice and honey sweetness.
This vinegar is produced in Modena, Italy using secular know-how that is rigorously adhered to. Made from white Lambrusco-Trebbiano must cooked in covered vessels, this white balsamic vinegar has a light amber colour and can be used as a drizzle, in a salad dressing, or on fruit!
