Fleur de Sel - the Caviar of Salt


This is from France and is considered the caviar of salt.

The crystals form on the top layer of the clay salt ponds. When the wind is blowing in a particular direction, then these delicate white crystals are created. They bring out the sweetness is everything.

In order to keep their purity of flavour, only wooden rakes are use by hand to collect this amazing salt.

Fleur de Sel is very much a finishing salt. Use it at the table or on fruit salad. It is wonderful on a piece of dark chocolate!
