Chipotle chills are smoked Jalapeño Peppers. They date back to the times of the Aztecs as a way of preserving Jalapeño Peppers. This chili has all the heat of the Jalapeño plus a beautiful sweet, smokey flavour. Try adding to mayonnaise for a great tasting dip or to chili for that lovely smokey flavour. The whole chills can be used either dried by grinding into a powder or reconstituted by dry roasting for several minutes then soaking in near boiling water for approx. 20 minutes.
