Originally from the Puglia region in southern Italy, this variety is distinguished for its oils with marked green notes and high intensity bitterness and spice. It is highly valued for its herbaceous profile with spice notes. It is very rich in polyphenols, which gives it its character and intensity. It has a rich mouth feel and some nutty notes with a strong arugula finish.
