This is a monovarietal of just the cornicaba olive. It is from the central region of Spain near Toledo.
The flavour of this oil is perfectly balances between sweet and bitter with a spicy aftertaste of medium intensity. Its highlights are the aromas of green leaves, tomato, basil and almond.
It pairs well with rice dishes, including currys. It is also delicious with artichokes, eggplant and other grilled vegetables. This is perfect for pesto.
