CAYENNE PEPPER is typically a blend of several ground chilis so as to give a nice uniform colour and consistent heat . It is used all over the world to add warming heat to any dish. It has an acidic, tart sometimes fruity flavour. When recipes call for red chili pepper this is usually what they mean.
