The CHICORY plant has many parts that are edible. The leaves are called endive and are used in salads, and the root can be dried and then roasted. The flavour of the root is a slightly bitter, warm "roasted" flavour. CHICORY ROOT is often mixed with coffee in several European counties.
Some will mix it with dairy to create a CHICORY flavoured yogurt or cream. It can be used in baking, and it is sometimes used on its own to make a hot steeped drink.
