ZA'ATAR (ZAHATAR ,ZAHTAR , ZATAAR or ZAATAR) is a Middle Eastern blend. Each country has its own variation. Za'atar is so multifaceted and dynamic because it's a blend of so many different flavours, textures, and fragrances. Even though it varies greatly depending on where you are in the Middle East, za'atar is generally a combination of dried oregano, or thyme, and/or marjoram (woodsy and floral), with sumac (tangy and acidic) and toasted sesame seeds (nutty and rich). And, it sometimes contains salt, dried orange zest, dried dill, or the wild herb za'atar.
It is herbaceous and sour and earthy and nutty.
Ours has: THYME, SUMAC, SESAME SEEDS. We suggest adding salt if you are using it on flatbread, or sprinkled on vegetables.
Za'atar is used as a condiment to sprinkle on grilled pita with olive oil or on salads. You can also use it in soups and it works well on grilled fish.
