Our extra virgin olive oils are cold pressed ( now they are cold extract , as few groves use pressing). In order to be extra virgin olive oil, the olive juice has to be below %1 acidity. Most are far below that acidity level. The lower the acidity means a higher smoke point. You can cook with these oils, but probably avoid any high temperature roasting!
