ASAFOETIDA (Hing) is the resin of the giant fennel plant. It is native to Asia and is used primarily in Indian cuisine. It is also called Devil's Dung, among other flattering names, due to its pungent smell! The taste is similar to sauteed garlic and onions, and adds those flavours to curries and lentil dishes. It also counteracts the digestive effects of legumes. A little goes a long way. Traditionally Asafoetida ground and mixed with wheat flour to make it easier to use. Our Asafoetida is mixed with rice flour and gum arabic and Turmeric instead and is gluten-free. These additional ingredients do not change the amazing favour.
