This olive oil is from an estate granted to Caroline de Prévôt by her father, King François the 1st during the Renaissance. It has stayed in the family for over 4 centuries.

Extremely smooth and fruity, it taste of asparagus, green apple, green almond, and freshly cut grass.
PROCESS :
The oil is obtained by ‘cold extraction '. The olives are harvested and brought the same day to the mill.
PAIRINGS :
This oil may be used as an accompaniment to fresh pasta, grilled peppers, drizzled on fish in foil, peaches poached with mint, or roasted figs.
