ANCHO CHILI PEPPERS are dried poblanos chills  They have a lovely sweet slightly smokey flavour with a mild heat. They are used extensively in Mexican Cuisine and make up one third of the holy trinity of chill peppers used in Mole sauce. These chills can be used either dried by grinding into a powder or reconstituted by dry roasting for several minutes and then soaking in near boiling water for approx. 20 minutes.
