ASAFOETIDA is the resin of the giant fennel plant. It is native to Asia and is used primarily in Indian cuisine. It is also called Devil's Dung, among other flattering names, due to its pungent smell! The taste is similar to sauteed garlic and onions, and adds those flavours to curries and lentil dishes. It also counteracts the digestive effects of legumes. A little goes a long way.
Traditionally, ground asafoetida is mixed with wheat flour as a flowing agent. Our asafoetida is mixed with fenugreek powder and is therefore gluten-free.
