GUMBO FILÉ powder is essentially ground sassafras leaves. It smells like juicy fruit gum. It is used to thicken a traditional Cajun Gumbo when okra is not used. It is a practice borrowed from the Choctaw Indians who used it to thicken soups and stews. GUMBO FILÉ powder should be added at the end of cooking and not boiled as it will become stringy.
