PEPPERCORN - WHITE
WHITE PEPPERCORNS come from the same plant as BLACK PEPPER. White pepper consists of the inner seed of the fully ripened pepper berries.
White pepper is made from fully ripe pepper berries. They are soaked in water for about 10 days, leading to fermentation.
Then their skins are peeled off, which also removes some of the hot piperine compound, as well as volatile oils and compounds that give black pepper its aroma and heat.
The taste of white pepper is less spicy but hotter and more aromatic than black. White pepper is used when one wants the pepper bite without the fragrance of black pepper dominating the other flavours.
It is often used in white sauces for its colour as well as its flavour.
