QUATRE ÉPICES literally means "four spices". This is a traditional French savoury blend of WHITE PEPPER, NUTMEG, GINGER and CLOVES. It is used in charcuterie, sausages terrines and and patés . This blend goes very well with rich game meats and casseroles. It gets some heat from the white pepper and ginger, a sweet nuttiness from the nutmeg, and a wonderful pungent top note from the clove.
