DAY #18 - Rosemary
ROSEMARY is the dried leaves of the rosemary plant. Their flavour strong with hints of mint and pine. The little leaves look like small pine needles. We buy our rosemary cut to small pieces as the needles can be quite hard, so there is no need to chop or grind them before using.
Since ancient times, the aromatic herb rosemary has been believed to improve your memory. It's an ancient symbol of fidelity and remembrance.
Cinnamon & Maple Syrup Roasted Butternut Squash
INGREDIENTS
1 Butternut squash - peeled and diced
1/2 tsp cinnamon powder
1/2 tsp rosemary
Olive oil - enough to coat the olive oil
1 Tbsp maple syrup
Salt to taste.
DIRECTIONS
Pre-heat the oven to 400º
Toss everything together in a bowl and coat properly.
Place the diced squash on 1 or 2 parchment covered baking sheets. Make sure the squash has enough space to caramelize. Bake for 15 minutes, then remove and turn the squash pieces and return it to the oven for 15 more minutes.
Sprinkle with salt and voila.
