    So when is a chip
    smoked and maybe chilly?
    But still quite fruity?
    Morita is s type of Chipotle chili. They are made from red, ripe jalapeño chili peppers. They are dried and smoked and have a slightly sweeter flavour than the more traditional chipotle.
    To Reconstitute dried chilis:

    1 - Cut off the stems and make a vertical slit. Pull open the chili and remove the seeds.

    2 - Heat up a skillet. Use a spatula to press them into a DRY, hot pan (15/30 secs each side). It is really important that you do not burn them as they will taste bitter.

    3 - Once they have been roasted, place them in a bowl and cover them with hot water ( not boiling). Let them soak for 20-30 minutes.

     

    Morita Sauce

    INGREDIENTS

    1/4 cup mayonnaise

    1 cup sour cream

    2 morita chilis ( reconstituted)

    1/2 lime , juiced

    1 garlic cloves, peeled

    salt to taste

    DIRECTIONS

    Blend everything together - add more lime juice if needed.

    Put in an airtight container for uptown a week.

    Perfect for fajitas, tacos, nachos...
