Any berries ( you can also add cut up , peeled apple)

    Cardamom Sugar ( or Lavender)*

    Thyme

    Water

    Directions:

Place your fruit in a pot on the stove, add enough water  ( measure the amount of water) to cover the berries.  Add half the amount of sugar to water. Add 1/4 tsp thyme to 2 cups of berries.

Now turn the heat to low and let everything cook together, stir occasionally to nothing sticks to the bottom and let simmer for at least 20/30 minutes. Keep stirring and cooking until the compote has thickend.

USE on yogurt in the morning, or with grilled chicken, or on a cheese plate.

    * You can also use honey if you don't have sugar. Try it with hot honey for some spice.
