This balsamic has been aged for 3 years and it is made from Lambrusco-Trebbiano must which is left to reduce in the open air ( the traditional method) , resulting in natural caramelization that lends the vinegar a rich dark colour.
It has a lovely balance of sweet and sour and is great in dressings, splashed in stews or soups, or for bread dipping.
