BLACK CARDAMOM (also called brown cardamom) has always been considered the lesser cardamom, but in fact it is a wonderful, aromatic spice that has a smoky, camphorous, earthy flavour that works perfectly in Indian cooking, especially Tandoori. Black cardamom is also a key ingredient in Vietnamese Pho.
