JUNIPER BERRIES are native to the Mediterranean, Russia, and Norway. Their flavour is piney with notes of turpentine, and they are most famous for their use in the making of gin.
Juniper berries add great flavour to gamey meats, and also help to cut the fattiness of duck dishes.
Bruise the berries before using. Try adding some to a barbecue sauce, or freeze them and add them to a martini!
