This is my new favourite drink.
One of my customers told me about a delicious sweet cardamom tea he drank in Saudi Arabia. He told me they used condensed milk, sugar, and a lot of cardamom. It was often, he said, spiced with rose petals or saffron.
I decided to try and make a version of this blend and have come up with our Karak Chay. We named it Chay instead of Chai to distinguish it from our Chai Masala, and because Chay is an old way of saying tea in some parts of the Middle East.
I have used ground organic decaffeinated black tea, sugar, cardamom, rose petals and saffron - It is truly deeeeelicious.
You can prepare it with hot milk, or with tea ( decaf or regular), or just with freshly boiled plain water. Here are the recipes below.
Cardamom Sweet Tea - for 1
2 tsp Karak Chay
1 tsp black loose leaf tea ( decaf or regular - or 1 teabag)
1 cup boiling water
Let it steep, strain into a cup and add milk if desired
Karak Chay Latte - for 2
3 tsp Karak Chay
1 cup boiling water - add to Chay and let steep, strain into a cup
1 cup steamed hot milk - add to hot tea
Karak Chay - for 3
in a pot add
1.5 cups water
4 tsp Karak Chay
1.5 cups of milk
Bring everything to a boil and let simmer for 3 minutes, strain into a cup.
* You can use the Karak Chay without a strainer, but you will find some small particles at the bottom of your cup - read them if you can.
Use a strainer if you want.
