Preserved lemons are a staple in many North African or Middle Eastern pantries. A lot of people scrap out the inside and just use the rind. However, you can use the inside for marinating, blend it with mayo to use on fish, or throw it into a lentil stew.
We have them in small jars so you can use them up easily - put them with chicken legs and olives, sprinkle with a spice blend, drizzle with oil and bake.
