Day 1 - Aji Amarillo
I am yellow and hot, but not the SOL.
Translated Aji Amarillo means Yellow Chili
This chili comes from Peru where it is one of the single most important ingredients in peruvian cuisine . Its flavour is that of a tropical fruit. This chili is quite hot but with a lovely taste.
Aji Amarillo Sauce
This sauce is great to drizzle over roast potatoes, grilled white fish, or grilled chicken breast. Try it instead of ketchup on your French fries.
Ingredients
1 Tbsp Aji Amarillo Powder
1 garlic clove minced
1 Shallot - chopped
2 Tbsp olive oil
½ cup Greek yogurt
1 tbsp Tomato paste
1 Lime - juiced
Salt and pepper to taste
Heat a skillet and dry roast the aji powder for 1 minute, then add the olive oil, shallot, and minced garlic. Sautee until soft and then blend all together into a aji paste.
Mix together the yogurt ( you can use sour cream), tomato paste, lime juice, and salt and pepper to taste. Then stir in the aji paste and there you have it.
