    Day 20 - Roasting Salt

    I am great to season all things cooked in the oven, and especially mid-day Sunday.

    Certain salts are worth having in your cupboard: Kosher, Maldon, Fleur de Sel. However, a good flavoured salt is extremely useful. It can be used on vegetables before roasting, a great flavour enhancer in soups or stocks, terrific on avocado or hummus.

    This roasting salt is particularly good on zucchini - slice the zucchini into discs and drizzle olive oil and a sprinkle of this salt - spread in one layer and roast at 425º for 10 -13 minutes.
