    Coriander seed.

    CORIANDER is an ancient spice reputed to have grown in the Hanging Gardens of Babylon.

    It is used in cuisines around the world. It is the seed of the cilantro plant, but does not retain that flavour. It tastes of lemon and orange peel with a hint of sage. It is used quite extensively in Indian cooking as it is an amalgamating spice and balances out the sweet and savoury in curry blends. You also find coriander in use all around the world.

    Coriander Crusted Salmon

    454g of Salmon ( steak or filet)

    1 tbsp olive oil

    1/2 Tbsp of each of the following:

    Paprika, Crushed coriander seed, Lemon zest, Ground black Pepper, Sugar, and salt.

    Blend the spices together and add a pinch of cayenne for heat if needed.

    Coat the salmon with the olive oiled then massage in the spice rub.

     

    Cook the salmon in a preheated oven at 425º for around 20 minutes.
