DAY 10 - Spruce Tips
The emerging tips of the white spruce are harvested in the spring. This springtime evergreen has a lovely fragrance similar to lemon & rosemary and has a rich lovely flavour perfect for teas, baking or infusing.
The dried ones need to be ground and/or steeped.
Garlic & Spruce Tip Roasted Potatoes
Ingredients
1/2 lb new potatoes
4 cloves of peeled garlic
1/4 cup olive oil
2 Tbsp spruce tips needles
Directions
Preheat the oven to 375º
Cut the potatoes in half and put them in a roasting pan.
Grind the spruce tips in a mortar and pestle and then add the fresh garlic cloves. Crush into a paste and add the salt. Keep grinding and then add the olive oil.
Pour the mixture over the potatoes and mix thoroughly. ( Use your clean hands ).
Sprinkle with Maldon Salt and put in the preheated oven for 45 minutes or until done.
