FENNEL POLLEN or fennel flower pollen is used in Tuscan cuisine. It originates from Italy, but is grown and collected in other parts of the world. It has a delicate, sweet, fennelish flavour and can be quite magical. Considered a very foodie ingredients. It is used in Porchetta , with wild boar, in pasta, and with scallops.
