This is a delicious simple way to prepare scallops. It takes 10 minutes to prepare the marinade and you can leave it in the fridge during the day. Take it out of the fridge when you get home and start your rice. Brown your scallops, and then heat the rest of the marinade - all in all 8 - 10 minutes!
Serves 4 ( or 2 with leftovers)
1/4 cup of Orange Olive Oil
1 Tbsp lemon juice
2 Tbsp freshly chopped parsley
1/2 tsp ground Fennel
1Tbsp minced garlic
1 Lbs (454g) scallops
2 Tbsp Olive Oil - for cooking
Mix everything together and then add the scallops. Let it sit at least 30 minutes.
Heat 2 Tbsp of olive oil over medium heat in a skillet. Remove the scallops from the marinade and fry in oil until browned ( approximately 3/4 minutes). Add the marinade to the pan and heat for 2 minutes.
Serve with rice.
