    Day 4 - Mint Sugar

    Our flavoured sugars are made by grinding the spices or herbs, and infusing them in cane sugar to allow the flavours to infused. Sweet mint is a traditional Christmas flavour and very versatile. It can be used in savoury and in sweet cooking. 

    Mint Sugar Cookies

    Ingredients

    2 3/4 cups flour

    1 tsp baking soda

    1/2 tsp baking powder

    1 cup butter ( room temperature)

    1 1/2 cup white sugar

    1 egg

    1 tsp peppermint extract

    1/2 cup mint sugar for rolling

    Directions

    Preheat the oven 375º

    Mix together the dry ingredients: flour, baking soda, baking powder in a bowl.

    Cream together butter and sugar, add egg and peppermint and beat until it is all incorporated.

    Blend together the wet and dry ingredients. Once the batter in blended and scoop cookies into small dough balls, roll in mint sugar, and place on an ungreased cookie sheet.

    Bake for 8 - 10 minutes, or until golden. Then let them sit for 2 minutes before transferring them to a wire rack.
