    Day 5 - Celery Seed

    I come in different forms – this time I am a seed and marry well with salt.

    This seed, in my opinion, is under used and under valued. It adds such a punch to soups, stews, and roasted vegetables. It is essential in pickling, and wonderful in dressings and in celery salt.

    Celery Seed Dressing

    A delicious condiment

    Ingredients

    2 tsp ground yellow mustard

    2 tsp kosher salt

    1/2 tsp ground black pepper

    1/2 chopped white onion

    1/4 cup white wine vinegar

    1/2 cup white balsamic

    2 cups olive oil

    1/8 cup celery seed

    Directions

    Blend together the mustard, salt, pepper, onion, and white wine vinegar.

    Then add the white balsamic and blend well - slowly drizzle in the olive oil. Then add the celery seeds.

     

    This works well for green salad, or boiled potatoes, or on grilled white fish.
