This chili is also known as CHILE NEGRO. The Pasilla is the dried CHILACA chili. Pasilla is mistakenly used to refer to ANCHO or MULATO chilis in Northern Mexico and California.
This chili is dark chocolaty brown and is quite long. It tastes of berry, grape with a hint of liquorice and has a very slight herby note. This is one of the TRINTYof chilis used in a molé sauce along with Ancho and Mulato.
