    Sausages with Roasted Cabbage & Apple

    This meal can be made in an hour, if you chop the cabbage, onion, and apple (put the apple in lemon water) in the morning. It is perfect for a mid-week homemade meal. If you make more, then  it is great for lunch the next day. The cabbage and apple add a lovely sweetness to the spicy sausages.

    Good for 4 people


    INGREDIENTS

    2 lb ( 908 grams) of Italian spiced sausage ( turkey or pork)
    1  head of purple cabbage , thinly sliced
    1 medium sliced onion
    2 apples sliced
    2 tsp thyme
    2 Tbsp red wine vinegar
    3 Tbsp olive oil
    1/2 cup water
    salt & pepper to taste

    DIRECTIONS
    Preheat the oven to 400º.
    Toss together the cabbage, onion, apple, thyme, vinegar, and 1.5 Tbsp of olive oil and the water. Put everything in a baking dish and roast, covered for 35-45 minutes.
    Heat the 1.5 Tbsp of olive oil in a skillet over med/high and cook the sausages until browned and done - 12 to 15 minutes.
    Add the cabbage and cook for another 5 minutes.
    Salt & pepper to taste.

    Serve with bread or boiled potatoes.
