Caesar Salad
1 large romaine lettuce, outer leaves discarded, inner leaves washed and dried
2 garlic cloves
1 tsp salt
1 tsp black pepper
1 Tbsp lemon juice
1 tsp Worcestershire sauce
½ tsp mustard ( Dijon or whatever you have)
1 large egg yolk
½ cup EVOO
1 cup freshly grated Parmesan cheese or Romano cheese, or 2 ½ ounces shaved with a vegetable peeler
Place the garlic, anchovy fillets, and salt in a wooden salad bowl. Using two dinner forks, mash the garlic and anchovies into a paste. Using one fork, whisk in the pepper, lemon juice, Worcestershire sauce, mustard, and egg yolk. Whisk in the olive oil.
Add lettuce, croutons ( recipe below), and cheese to the bowl and toss.
Garlic Croutons
Ingredients
3/4 loaf of bread, (5 cups of bread cubes)
2 Tbsp unsalted butter
3 Tbsp Garlic Olive Oil
1 tsp dried parsley
1/4 tsp salt
1/4 tsp freshly ground black pepper
Directions
Melt the butter and combine with everything but the bread. Drizzle the mixture over the bread cubes and blend to make sure everything is absorbed.
Heat oven to 375º and spread the cubes evenly on a baking sheet. Bake for 15-20 minutes. Check half way through and shake the pan.
