Peach Chutney

Peach Chutney

INGREDIENTS

  • 2 cups of cubed peaches
  • 1/2 tsp brown mustard seeds
  • 1/2 tsp singapore curry (or another curry powder)
  • 1 tsp grated fresh ginger
  • 1 garlic clove, minced
  • 2 Tbsp of lemon juice (or another acid like apple cider vinegar, or white wine vinegar)
  • 2 Tbsp of honey
  • 1 Tbsp butter or olive oil
  • pinch of salt
  • pinch of cayenne pepper - OPTIONAL

DIRECTIONS

  • Melt butter in a pot and then add the mustard seeds and cook for a couple of minutes, then add the curry powder and stir. 
  • Add in the ginger, and garlic and cook for a couple of minutes while stirring.
  • Then add the peaches, lemon juice, honey and turn down the heat.
  • Let everything cook on low heat for 15/30 minutes, stirring occasionally. If the peaches are not incorporated enough keep cooking on low until you reach the desired consistency.

NB - Cooking time will vary depending on the ripeness of the peaches. Sweetness will also vary for the same reason.
