Peach Chutney
INGREDIENTS
- 2 cups of cubed peaches
- 1/2 tsp brown mustard seeds
- 1/2 tsp singapore curry (or another curry powder)
- 1 tsp grated fresh ginger
- 1 garlic clove, minced
- 2 Tbsp of lemon juice (or another acid like apple cider vinegar, or white wine vinegar)
- 2 Tbsp of honey
- 1 Tbsp butter or olive oil
- pinch of salt
- pinch of cayenne pepper - OPTIONAL
DIRECTIONS
- Melt butter in a pot and then add the mustard seeds and cook for a couple of minutes, then add the curry powder and stir.
- Add in the ginger, and garlic and cook for a couple of minutes while stirring.
- Then add the peaches, lemon juice, honey and turn down the heat.
- Let everything cook on low heat for 15/30 minutes, stirring occasionally. If the peaches are not incorporated enough keep cooking on low until you reach the desired consistency.
NB - Cooking time will vary depending on the ripeness of the peaches. Sweetness will also vary for the same reason.
