2 Tbsp Garam Masala
½ cup butter
1 tsp of pasilla chili ( or ancho, or a very spicy cayenne)
Peel and chop the peaches into bit sized pieces.
Add the garam masala and mix together.
Place the peaches in a sauce pan on a very low heat. Add a little water so the peaches don't stick to the bottom. Add the chili.
Let the peaches cook through. When they are done, take the sauce pan off the heat, and add butter, and blend everything together.
This is so good with salmon, and especially for cold poached salmon.
This is a delicious condiment for roast Turkey and other meats.
Other fruit can be added for a variation. Apples and plums would work well.
