ARGENTINIAN TRI TIP STEAK WITH CHIMICHURRI

Chimichurri is a sauce used with grilled meats. It is now being used as a dry rub as well. Though it is associated with steak, it can be used with fish and chicken. If using the dry blend as a traditional rub, then add salt. If using the dry rub for a sauce base, then use ¼ cup rub – ½ cup olive oil – 3 Tbsp of red wine vinegar.
