    Roast Beef on Toast with Remoulade & Fried Onions

    12 slices of roast beef
    4 thickly sliced pieces of bread (pumpernickel or rye)
    4 Tbsp of Remoulade
    1 large onion - sliced and separated
    4 Tbsp of cornstarch
    4 cups of high heat oil for frying
    Salt
    Olive Oil

    Remoulade ingredients - whisk together and then refrigerate. 

    1/2 cup mayonnaise
    1/2 tsp curry powder
    1 Tbsp mustard
    1 tbsp lemon juice
    1 Tbsp chopped capers
    1/4 tsp salt

    Heat high heat oil to a deep frying pan - heat oil to 350º. Add cornstarch with a pinch of salt to a bowl and throw in onions to coat. Fry in batches and drain on paper towel - season with salt.

    Toast the bread  - then drizzle with olive oil and top with roast beef. Then add the remoulade and fried onions.
