    Beet, Basil, and Orange Salad

    Ingredients

    3 whole beets - boiled, peeled and thinly sliced

    2 oranges - peeled and sliced

    3 Tbsp fresh basil - finely chopped 

    OPTIONAL - crumbled feta cheese on top for a delicious lunch salad.

    dressing ingredients

    1/2 cup orange olive oil,3 Tbsp wine vinegar - either red or white,1/2 orange for juicing, pinch of salt.

    Put olive oil and pinch of salt in a bowl and whisk. Blend together the juice of the orange with the wine vinegar and slowly drizzle it into the oil while whisking.

    Directions

    Layer the sliced beets , and then top with slices of orange, and then slices of beets, and then sliced of orange - keep going until you are done with slices. After each layer drizzle a bit of the dressing. Sprinkle the basil over the top and pour over any remaining dressing.

    Serve as a side for grilled fish, or chicken.
