    Cinnamon & Maple Syrup Roasted Butternut Squash

    What an easy, delicious way to prepare squash.

    INGREDIENTS

    1 Butternut squash  - peeled and diced

    1/2 tsp cinnamon powder

    1/2 tsp rosemary

    Olive oil - enough to coat the olive oil

    1 Tbsp maple syrup

    Salt to taste.

    DIRECTIONS

    Pre-heat the oven to 400º

    Toss everything together in a bowl and coat properly.

    Place the diced squash on 1 or 2 parchment covered baking sheets. Make sure the squash has enough space to caramelize. Bake for 15 minutes, then remove and turn the squash pieces and return it to the oven for 15 more minutes.

    Sprinkle with salt and voila.

    TIP - You can use spiced sugar instead of cinnamon and maple syrup - try hibiscus sugar for a different flavour.
