A great side to accompany grilled feta, or chicken.
1 Large butternut squash
2 Tbsp olive oil
2 Tbsp cinnamon sugar
1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
2 Tbsp lime vinegar ( or lime juice)
Heat the grill.
Wash the squash and olive lengthwise - scoop out the seeds and slice into 1/2 inch slices. Place slice sin a steamer and steam for 10 minutes.
Mix oil, sugar, salt, and pepper together and toss together with steamed squash.
Place the squash on the grill and grill for 10-15 minutes turning occasionally.
Remove to a platter and drizzle marinade/dressing on top.
