Jerk Ketchup 


4 green onions

1 can (28oz) tomatoes

2 onions roughly diced

5 cloves of garlic roughly chopped

1/4 cup red wine vinegar

2 cups water

3 limes, zest and juice

1 tsp allspice

1 tsp cumin

1 tsp green peppercorns

2 tbsp coriander

2 tsp guajillo powder

1 tsp amchur powder

1 tsp epazote

1/4 tsp nutmeg ground

1/4 tsp cinnamon

2 tsp fresh thyme

1 cup brown sugar

Salt to taste

NB - You can substitute The Spice Trader JERK RUBfor the dried spices (4 Tbsp)


In a dry sauce pan, toast allspice, pepper, coriander, and cumin.

Grind spices to fine consistency.

In the same sauce pan, sauté onion, garlic, and green onions until soft.

Add all spices and herbs.

Cook for 1 minute.

Add vinegar, water, tomatoes,  and brown sugar.

Simmer for 10 minutes.

Add zest and lime juice.

Blend until smooth.

Jar and store in fridge.
