Banana Ketchup
INGREDIENTS
1 tbsp olive oil
1 onion roughly diced
1 clove garlic roughly chopped
4 ripe bananas
1 1/2 cups water or citrus juice
1/2 cup white wine vinegar
2 tsp honey
1/4 can tomato paste
2 tbsp Ras El Hanout
Salt to taste
DIRECTIONS
Caramelize onions and garlic.
Mash bananas and add to onions and garlic.
Cook for 1 minute.
Add water, vinegar, honey, tomato, and Ras El Hanout.
Cook for an additional 5 minutes.
Blend until smooth.
Season.
Store in jar and refrigerate.
