    CORN BREAD

    Ingredients

    1 cup plain flour

    1 cup cornmeal

    2 tsp baking powder

    ¼ tsp baking soda

    1 tsp salt

    ½ cup brown sugar ( or maple syrup)

    1 cup buttermilk

    ½ cup Jalapeño Olive Oil

    1 large egg

    1 yolk

    Directions

    Pre heat oven 375º

    Prepare an 8 x 8 pan (grease or parchment paper)

    Mix together: flour, cornmeal, baking soda, baking powder, salt.

    Whisk together: oil, buttermilk, egg, yolk, maple syrup.

    Pour the wet ingredients into the dry and gentle blend everything together.

    Pour into the prepared pan and bake for 25 minutes – tester should come out clean. Let cool and serve with fresh butter!
