    Toasted Sourdough and Goat Cheese with pickled Strawberrries.

    Grilled sourdough and pickled strawberries with goat cheese, thyme and honey.

    Toast the bread or fry it in olive oil until golden and crispy.  Cover with goat cheese and top with strawberries - smash them gentle with a fork. Drizzle with honey, sprinkle with thyme and a pinch of salt.

    Pickled Strawberries

    2/3 cup white wine vinegar

    2 Tbsp honey/ or sugar

    1/4 tsp fine sea salt

    1 tsp black peppercorns

    zest of 1 lemon

    1 1/2 cups of strawberries ( hulled and cut in half)

    1/2 cup water

    Stir everything together  in a sauce pan over high heat except strawberries. Bring to a boil and dissolve honey/sugar for 1 minute.

    Let the mixture cool down. Place the berries in a jar and cover with the cool liquid. gentle shake the jar and place in the fridge for minimum of 2 hrs.
