Champagne Vinaigrette
Perfect for a simple green salad, steamed asparagus, broccoli...
1/3 cup of Champagne Vinegar
2 tsp honey mustard ( 1 tsp dijon mustard/1 tsp honey)
1 shallot finely chopped
1 cup Extra Virgin Olive Oil
pinch of ground white pepper
pinch of salt
Place vinegar, shallot, mustard ( and honey) in a blender or use a hand blender. Once blended drizzle in olive oil until emulsified. Taste and add the salt & pepper to taste.
