Fish Chowder
Ingredients
3 Tbsp unsalted butter
2 garlic cloves - chopped
3 onions - chopped
1/2 cup white wine
4 Tbsp flour
3 cups of milk
2 cups stock - chicken, fish, or vegetarian
1/2 cup cream
2 cups of cubed potatoes
1.75 lbs ( 750 grams) of fish ( we use halibut and haddock) - cut in pieces*
1 tsp each of cumin, smoked paprika, bouquet garni/ or 3 tsp Mahone Bay Spice
salt & pepper to taste
* you can use any fish or seafood: crab, smoked fish, lobster, cod...
Directions
Melt butter in a large pot and then add the onions and garlic over medium heat. Cook for 5 - 7 minutes stirring occasionally. Add the spices ( bouquet garni, cumin, smoked paprika) and stir. Then turn the heat to high and add the wine. Stir and let the wine mostly evaporate. Turn the heat back to medium and add the flour. Stir and let the remaining butter and wine cook with the flour. Slowly stir in the broth and let it thicken, and then do the same with the milk.
Add the potatoes and bring to a simmer and cook the potatoes ( 8 - 10 minutes), then add the fish. The fish cooks quickly 3 - 4 minutes. Then stir in the cream and season with salt and pepper.
You can garnish with a sprinkle of paprika or parsley or chives!
Serve with Irish soda bread.
