    Poached Pears with Hibiscus Whipped Cream


    Ingredients
    4 pears - peeled
    1 litre of water
    1.5 cup honey or sugar
    10 cardamom pods- crushed
    1 vanilla pod
    250ml of whipping cream
    1 Tbsp of hibiscus petals
    Fresh mint

    Directions
    Pour half the cream into a small pot with the hibiscus and bring to a simmer and then turn off the heat and let it steep. Remove and set aside. Strain out the hibiscus leaves and place the cream in the fridge.

    Place the water, spices and sweetener in a pot and stir. Then put the heat on low and bring to a simmer and lower the pears into the liquid. Keep simmering for 2 hours. Once the pears are tender take the pot off the stove and let them cool.

    Meanwhile, mix the hibiscus infused cream with the rest of the whipping cream and whip.

    Cut the pears in half and core out the seeds. Place both halves in a bowl and top with whipped cream and top with fresh mint.
