Grilled Fish with Pistachio Sauce

            Grilled Fish with Pistachio Sauce



2 lbs of white fish

Salt and Pepper

Large bunch of spinach, steamed


150g shelled, unsalted pistachio nuts

1/2 lemon, zest & juice

1 Tbsp orange blossom water

1 garlic clove, crushed into a paste with salt

1/2 cup fresh parsley, roughly chopped

1/2 cup mint leaves, roughly chopped

1 tbsp water

5 Tbsp olive oil

sae salt & pepper



Roughly crush the nuts in a mortar & pestle, or in a food processor. Transfer to a bowl and mix with the other ingredients.

Grilled or pan fry the fish. Place it on the steamed spinach, and top it with the pistachio sauce.
